Raveneau’s wines are legendary for their precision, intensity, and remarkable ability to age, and this vintage shows exactly why the domaine is considered one of Burgundy’s finest.

Tasting Notes
With more than two decades in bottle, the wine shows a beautiful golden hue and a deeply expressive aromatic profile. The nose opens with ripe citrus, baked apple, white flowers, crushed oyster shell, smoky mineral notes, and subtle layers of honey and nuts, all unfolding with elegant tertiary complexity while retaining a lively, chalky freshness. On the palate, it is concentrated and layered, balancing mature fruit with razor-sharp mineral drive. The Kimmeridgian limestone soils lend a distinctly saline, stony energy that stretches the wine’s length and adds precision to the finish, where citrus, chalk, and a delicate smoky nuance linger. It is fully developed now, but still shows the structure and balance to remain captivating in bottle for years to come.

Production
Monts Mains is one of Chablis’ most sought-after Premier Cru vineyards, and here it is shaped by Domaine François Raveneau’s meticulous approach. The vineyard’s Kimmeridgian terroir, rich in limestone and fossilized marine material, is central to the wine’s saline, mineral character. Raveneau is known for careful, low-intervention viticulture and patient vinification designed to preserve purity, terroir expression, and the capacity for long aging.

Food & Serving
This mature Chablis pairs beautifully with seafood such as oysters, lobster, scallops, and turbot, as well as dishes with creamy sauces, roast poultry, or fine aged cheeses. Serve it chilled but not too cold, ideally around 10–12°C, and consider a short decant if needed to help the wine fully open after long bottle aging.
