Description
Domaine Raveneau’s Chablis 1er Cru Montée de Tonnerre 2005 is a standout expression of Chardonnay from one of Burgundy’s most revered addresses. It combines the finesse and tension Chablis is famous for with real depth and age-worthy structure, showing why Raveneau has long been regarded as a benchmark producer in the region.
Tasting Notes
The wine shows a pale golden hue with subtle maturity in the glass. On the nose, it opens with citrus fruit, white flowers, and a distinct mineral edge that speaks clearly of its Chablis origins.
On the palate, it is concentrated and focused, balancing generous texture with vibrant acidity. The finish is long, precise, and beautifully mineral-driven, with the wine now offering a harmonious interplay of fruit and structure. While already at an excellent stage of development, it still has the capacity to evolve positively over the coming years.
Production
Made from Chardonnay grown in the Premier Cru Montée de Tonnerre vineyard in Chablis, the wine reflects the cool climate and limestone-rich soils that define the appellation’s crystalline style. Domaine Raveneau is known for meticulous vineyard work and careful harvesting, allowing the fruit to arrive in the cellar in excellent condition. Vinification is handled with a restrained approach designed to preserve purity, texture, and the site’s unmistakable mineral character.
Food & Serving
This is an excellent match for oysters, shellfish, grilled langoustines, Dover sole, and delicate poultry dishes with cream or beurre blanc. It also pairs beautifully with aged Comté or other refined hard cheeses. Serve chilled, ideally around 10–12°C, and decanting is generally not necessary, though a short aeration can help if the bottle is showing especially reserved on opening.
Producer
Domaine Raveneau is one of Chablis’s most respected and sought-after producers, with a reputation built on precision, restraint, and exceptional site expression. Founded in the mid-20th century and still family-run, the domaine has become a reference point for serious white Burgundy collectors. Its wines are celebrated for their longevity, complexity, and consistent quality, particularly from its prized Premier Cru and Grand Cru holdings.
