Tasting Notes
In the glass, the 2019 Passetoutgrain shows a bright ruby color with a youthful translucence, hinting at its freshness and finesse. The nose is distinctly Burgundian, with aromas of dried grass, earth-tinged red berries, and a gentle rustic note that adds character rather than heft. Subtle floral tones and a whisper of spice emerge with air, giving the bouquet both charm and complexity. In the cellar, fermentation takes place in traditional vats, with a gentle extraction to emphasize finesse over power and to preserve the purity of fruit.
