Production
This wine comes from the renowned Bonnes Mares Grand Cru vineyard in Burgundy, where limestone- and clay-rich soils, combined with old Pinot Noir vines, give the wine its intensity and definition. The grapes are hand-harvested and vinified with a significant proportion of whole clusters to preserve aromatic complexity, texture, and elegance. After fermentation, the wine is aged in French oak barrels, including a moderate share of new oak, which adds depth and subtle spice without overshadowing the purity of the fruit.
Food & Serving
This is an excellent match for roasted duck, game birds, venison, mushroom dishes, and truffle-based preparations, as well as aged cheeses. Serve at around 16–18°C to allow the aromatics and texture to fully open. Decanting for 1–2 hours is recommended, especially if opening now, to let the wine show its full complexity and soften its structure.
