Produced only in the finest vintages, Cuvée da Capo takes the intensity and depth of Pégau’s celebrated Cuvée Réservée and turns the volume up another notch. This Nabuchodonosor bottling is not just a wine, but a centrepiece for grand occasions, offering decades of evolution in bottle.

Tasting Notes
In the glass, the 2016 Cuvée da Capo shows a deep, opaque ruby core with a garnet rim hinting at its concentration and potential longevity. The nose is heady and complex, layered with black cherry, ripe plum and black raspberry, supported by notes of dark chocolate, licorice, garrigue herbs (thyme, rosemary, lavender), cured meat and a touch of incense and warm spice. On the palate, this is a powerful, full-bodied Châteauneuf-du-Pape with a velvety texture and remarkable richness. Waves of black cherry, macerated plum, cocoa and sweet spice roll across the mouth, framed by finely knit tannins and vibrant, savory undertones. Despite its sheer size, the wine retains impressive balance and elegance, with a very long, persistent finish that echoes dark fruit, chocolate and dried herbs. In 2016, Cuvée da Capo has the structure and concentration to develop gracefully until at least 2040 and likely beyond, especially in this large-format 15L bottle, where aging is even slower and more refined.

Production
Cuvée da Capo is sourced from some of Domaine du Pégau’s most prized plots in Châteauneuf-du-Pape, rooted in a mosaic of galets roulés (rounded river stones), clay and sandy soils that capture the sun’s warmth and encourage perfect ripening. The blend is traditionally Grenache-dominant, with Syrah, Mourvèdre and a field blend of other permitted Rhône varieties contributing complexity and structure. Grapes are harvested by hand at optimal ripeness, with rigorous sorting in the vineyard and cellar. Fermentation takes place with whole clusters and native yeasts in traditional vats, followed by long aging in large, old oak foudres to preserve the wine’s character and intensity without overt wood influence. Bottling is done with minimal fining or filtration, in keeping with Pégau’s classic, old-school approach.

Food & Serving
This commanding 2016 Cuvée da Capo is best suited to rich, hearty dishes such as slow-braised lamb shanks, roast venison, duck with confit or cherry jus, beef daube Provençale, or game birds with truffle and wild mushroom. It also pairs beautifully with aged hard cheeses like Comté, aged Gouda or mature sheep’s cheeses, and with dishes highlighting Mediterranean herbs. Serve at 16–18°C (60–64°F). Given its scale and youth, decant generously—at least 2–3 hours before serving for current enjoyment, and longer for younger bottles—to allow the wine’s aromatics and texture to fully unfurl, especially when pouring from this 15L large format.
