Tasting Notes
In the glass, La Paille 2022 shows a pale straw to light lemon hue, with a slight silvery-green rim that hints at its youthful energy and mountain origin. The nose is lifted and expressive: freshly grated lime zest, lemon pith, and crushed herbs are layered with hints of white flowers, alpine meadow notes, and a gentle, chalky minerality.
On the palate, the wine is taut yet textural, with a fine, lees-derived creaminess that never overwhelms its precise, linear structure. Production
La Paille comes from a single plot of very old Gringet vines rooted in poor, white marl soils over hard limestone bedrock in the Savoie region of eastern France. These soils, combined with the cool Alpine climate and significant diurnal swings, naturally limit yields and intensify aromatic and mineral expression. The vines, having struggled for decades to push their roots deep into the bedrock, translate this effort into an unmistakable sense of salinity and tensile energy in the wine. Harvesting is typically done by hand to preserve berry integrity and allow for meticulous selection in the vineyard. Vinification and aging follow the same minimal-intervention approach used for the domaine’s other single-vineyard cuvées, allowing the uniqueness of the site to shine: gentle pressing, indigenous yeast fermentation, and élevage on fine lees to build texture and complexity without masking the clarity of the terroir.

La Paille 2022 is a natural match for refined, mineral-driven dishes—think oysters, scallop crudo, sashimi, or delicate white fish with citrus and herbs.
