Among the sun‑drenched, touristy vineyards of the region, this is a rare Cassis that delivers genuine finesse, terroir expression and precision. Rooted in a historic estate now farmed biodynamically, it offers a contemporary, vibrant take on a classic Provençal white.

Tasting Notes
In the glass, this Cassis Blanc shows a pale straw to light gold hue, with a subtle green tint that hints at its freshness and youth. The nose is immediately evocative of the Mediterranean: lemon zest, ripe pear and white peach layered with fennel frond, wild herbs, and a delicate saline breeze. Notes of white blossom, crushed stones and a touch of almond round out the aromatic profile. On the palate, the wine is bright and finely textured, with a lively, mouthwatering acidity that balances its gentle ripeness. Citrus and orchard fruits are joined by nuances of anise, sea spray and a subtle, savoury minerality that lingers on the finish. The vineyards of Domaine du Bagnol are nestled between the limestone hills of the Provençal hinterland and the open Mediterranean bay at Cassis, giving the wines a distinctive maritime imprint. Clay‑limestone soils, bright white rock formations and pale, reflective soils amplify the famous light of Provence while helping to retain freshness in the fruit. Farmed according to biodynamic principles since 2003, the estate relies on careful, often manual vineyard work and low yields to preserve purity and balance. Grapes are typically harvested by hand in the cool hours to protect aromatics, then gently pressed and fermented at controlled temperatures, predominantly in stainless steel, to highlight the natural clarity, salinity and minerality of Cassis Blanc rather than overt oak influence.

Food & Serving
This Cassis Blanc is a natural partner for seafood and Mediterranean cuisine. Think freshly shucked oysters, grilled sea bream, seafood platters, bouillabaisse, or simply prepared shellfish with lemon and herbs. It also pairs beautifully with Provençal vegetable dishes, goat’s cheese, and light poultry or herb‑roasted white meats. Serve well‑chilled but not icy, ideally at 10–12°C, to allow the aromatics and texture to open. Decanting is not essential, but pouring it into a carafe 15–20 minutes before serving can help the wine unfurl its subtle herbal and mineral nuances.
