This is a modern, terroir‑driven expression from a young estate that draws on deep winemaking roots to create an elegant, all‑season rosé.

Tasting Notes
In the glass, this wine shines with a radiant, luminous pink hue that immediately signals freshness and vibrancy. The nose opens with an inviting bouquet of red berries, led by wild strawberries, supported by hints of red currant and a gentle floral lift. On the palate, Domaine D’O Pinot Rosé 2024 is refreshing and fruit‑forward, with juicy red berry flavours framed by a clean, crisp structure. The Pinot Noir brings a fine, delicate texture and a subtle savoury edge that keeps the wine dry and food‑friendly rather than overtly sweet. Production
Domaine d’O farms its vineyards in the cooler, elevated reaches of Languedoc around Limoux and the broader Pays d’Oc, where Mediterranean sunshine is tempered by altitude and cooling breezes, preserving acidity and aromatic freshness in the Pinot Noir grapes. The fruit for this rosé is harvested relatively early to retain brightness and moderate alcohol, then gently pressed to achieve its delicate colour and fine tannin profile. A cool, temperature‑controlled fermentation in stainless steel protects the wine’s aromatic purity and crisp structure, with the focus firmly on expressing fresh red fruit rather than oak influence.

Food & Serving
This is a true all‑season rosé that’s as easy to enjoy on its own as it is at the table. It pairs beautifully with a classic Caesar salad, quiche Lorraine, grilled chicken or pork from the barbecue, and is an excellent match for sushi and sashimi, where its freshness complements delicate flavours and cuts through richer textures. Serve well chilled at around 8–10°C. Decanting is not necessary; simply open and pour, allowing the wine a few minutes in the glass to fully express its red berry aromatics.

Producer
Domaine d’O is the personal project of winemaker Oliver Lemstra Bake, who quite literally grew up in the world of fine wine. Born at the Hospices de Beaune and raised among the Grand Crus of Burgundy and the vineyards of Château Canet in the Languedoc, vines, grapes and cellars were a natural part of his childhood. After honing his craft in cellars as far afield as Mendoza in Argentina, he returned to France to apply this international experience to his own 12‑hectare estate in AOC Limoux. At Domaine d’O, Oliver unites his Burgundian roots with his Languedoc upbringing, crafting precise, characterful wines that showcase the cooler terroirs of the region and a thoughtful, hands‑on approach to modern southern French winemaking.
