Domaine des Roches Neuves L'Echelier Saumur Blanc Bio 2020 is a pure, biodynamic Chenin Blanc from one of the most coveted parcels in Saumur. This cuvée brings together precision, energy and textural depth, offering a Loire white that is both uncompromisingly mineral and quietly luxurious. First produced in 2012, L’Echelier has quickly become one of the reference points for top-tier Saumur Blanc.
Tasting Notes
In the glass, the 2020 L'Echelier Saumur Blanc shows a pale straw to light gold hue, with brilliant clarity and a fine, almost crystalline luminosity. The nose is immediately vibrant, with plenty of citrus—think lemon zest, grapefruit pith and blood orange—wrapped around a cool, stony core. Flinty, smoky accents evoke struck match and wet stones, while subtler layers of white flowers, quince, and green apple appear with air.
On the palate, this is taut, racy and finely etched, yet cushioned by a gentle, lees-derived creaminess. The texture is both silky and driven, with ripe citrus, crunchy pear and yellow apple framed by a tensile, saline minerality. The finish is long, linear and mouth‑watering, marked by chalky grip and a persistent, almost salty echo. Still youthful in 2020, this wine has the structure and acid backbone to evolve beautifully for 8–12 years, gaining more honeyed, waxy and nutty complexity while retaining its spine of freshness.
Production
L'Echelier comes from a superb single parcel in Saumur, where Chenin Blanc is rooted in clay-sand soils rich in active limestone, a terroir that naturally delivers tension, precision and a pronounced mineral signature. The estate is farmed organically and biodynamically, with meticulous work in the vineyard and low yields to concentrate flavor. Grapes are hand-harvested at optimal ripeness, carefully sorted, and gently pressed to preserve purity. Fermentation takes place with a low‑intervention philosophy, allowing indigenous yeasts to carry the ferment. The wine is then aged in large 600‑liter oak barrels, where it rests for nearly a year on fine lees at relatively cool temperatures, building texture and complexity without heavy oak imprint.
Food & Serving
This Saumur Blanc is an exceptional partner for refined seafood dishes such as oysters, scallops, turbot, sole or langoustines, as well as lobster with beurre blanc. It also shines alongside goat’s cheese (especially Loire classics like Crottin de Chavignol), poultry in cream sauces, veal blanquette, and delicately spiced vegetable dishes. Serve at 10–12 °C to highlight its freshness and aromatic detail. Young bottles benefit from 30–60 minutes in a carafe to open the nose and soften the structure; as it ages, a gentle decant just before serving will help the wine fully express its layered complexity.

Since taking over in the early 1990s, Germain has converted the domaine to certified organic and then biodynamic farming, championing a vineyard‑first, low‑intervention approach long before it became fashionable. His work has helped redefine the reputation of Saumur and Saumur-Champigny, proving that these appellations can produce wines of true terroir transparency and grand-cru‑level finesse. L’Echelier, acquired in 2012, quickly joined the estate’s top bottlings and is now regarded as one of the most precise and profound expressions of Chenin Blanc in the region.
