Tasting Notes
In the glass, this is a dark, concentrated Pinot Noir with a vivid ruby core and an almost brooding edge. The nose opens with ripe blackberries, blueberries, redcurrants, dark plums and a subtle hint of cherry stone, layered with the earthy, savoury nuances that give Pommard its unmistakable identity. The palate follows through with generous dark fruit, firm yet refined tannins and a sense of impressive concentration. There is plenty of energy and freshness beneath the richness, making the wine feel complete and well balanced. While already expressive, it has the structure to age gracefully over the next several years, gaining even more complexity with time.

Production
The fruit comes from the domaine’s own parcels in Pommard, where the iron-rich clay soils help shape the wine’s dark fruit profile and firm structure. Winemaker Eric Guillemard works with great respect for the environment, and the grapes are harvested by hand before being carefully sorted to ensure only the best fruit is vinified. Maturation takes place in a combination of new and used oak barrels, a method that preserves fruit purity while adding depth, texture and the traditional Burgundy richness that Pommard is known for.

Food & Serving
This is a natural match for roasted duck, beef tenderloin, game birds, lamb or mushroom-based dishes, especially anything with earthy herbs or a rich sauce. Serve at 15–17°C for the best expression of its fruit and structure. Decanting for about 30 minutes can help open the aromas, particularly if enjoyed while still young.
