In the glass, Les Terrasses 2023 presents a bright, pale straw color with subtle green reflections, hinting at its youthful vibrancy. The nose is expressive yet finely etched, opening with notes of green apple, quince, and citrus zest, layered with white flowers, crushed stone, and a touch of fresh almond and verbena. With a bit of air, more Jura typicity comes through: hints of hay, lightly smoked mineral tones, and a saline edge.

Production
Les Terrasses is sourced from terraced vineyard parcels in the heart of the Jura, where the Savagnin vines grow on classic marl and limestone soils that lend a pronounced minerality and tension to the wine. The domaine typically harvests by hand to ensure careful selection of healthy, optimally ripe grapes, preserving the variety’s natural acidity and aromatic precision. In the cellar, the wine is vinified in a topped-up (ouillé) style to avoid oxidative development, usually with a gentle pressing, native yeast fermentation and aging in tanks and/or neutral barrels. This approach highlights the clarity of fruit, the salinity and the fine structure bestowed by the Jura terroir, rather than heavy oak influence.
Food & Serving
This Savagnin is superb with refined, subtly rich dishes: think Comté or other hard alpine cheeses, trout with beurre blanc, scallops, poultry in cream sauce, mushroom risotto, or vegetable dishes featuring leeks, fennel or asparagus. Its bright acidity and mineral drive also make it an excellent match for sushi, sashimi and delicate seafood. Serve well-chilled but not icy, ideally around 10–12°C, to allow the aromatics to open.
