Description
Domaine de La Pousse d'Or’s Pommard Les Jarollières 2023 captures the appellation’s celebrated combination of power, structure and refinement. From one of the domaine’s established Premier Cru vineyards, it offers impressive concentration and mineral precision while retaining the finesse that defines this highly regarded Côte de Beaune producer. Made biodynamically with minimal intervention, it is a poised Burgundy with excellent cellaring potential.
Tasting Notes
The wine displays a deep ruby colour. Its expressive bouquet opens with ripe red cherries, raspberries and violets, followed by subtle nuances of forest floor, warm spices and finely integrated oak. On the palate, it is layered and concentrated, with lively acidity, refined tannins and a distinct mineral core. Despite Pommard’s naturally structured character, the wine remains remarkably precise and elegant, finishing long, fresh and complex.
This is a serious yet graceful Premier Cru that will develop additional savoury and earthy complexity with bottle age. It can be enjoyed in its youth for its vibrant fruit and freshness, but should reward cellaring over the medium to long term as the tannins soften and the terroir-driven character becomes more pronounced.
Production
Les Jarollières is a biodynamically farmed Premier Cru vineyard in Pommard, Côte de Beaune, where the terroir gives the wine both mineral definition and classic structure. Following rigorous selection, the grapes are completely destemmed and undergo a cold maceration of six to eight days. Fermentation and maceration continue for approximately 18 to 21 days, with limited pumping over and almost no pigeage to preserve finesse. The wine is then matured for around 12 months in 228- and 350-litre French oak barrels, approximately 30% of which is new, followed by a further three months in stainless steel before bottling at the domaine.
Food & Serving
This Pommard is an excellent match for refined dishes such as veal sweetbreads, duck breast, guinea fowl and venison. Its combination of structure, freshness and earthy complexity also complements mushrooms, truffles, confit shallots and dishes served with a light red wine sauce. For a classic Burgundian pairing, serve it with mature Époisses or Langres. Serve at approximately 15–17°C. A gentle decant of 30–60 minutes can help open the wine in its youth, while older bottles are best decanted carefully to remove any sediment without over-aerating them.
