Tasting Notes
In the glass, Hermaion 2022 shows a luminous, translucent ruby hue with bright garnet reflections at the rim. The nose is vibrant and lifted, opening with wild red berries, cranberry and pomegranate, followed by notes of rose petals, peony, blood orange zest and a subtle mineral smokiness. With a bit of air, hints of forest floor, white pepper and delicate herbal tones emerge, adding complexity without ever feeling heavy.
On the palate, this is a finely etched, energetic Pinot Noir, driven by juicy red fruit and mouthwatering acidity. Silky tannins frame flavours of wild strawberry, red cherry and rhubarb, interwoven with savoury spice, crushed stone and a faint saline edge that speaks clearly of its cool-climate origin. The finish is long, precise and refreshing, with a gentle grip and a lingering impression of red currant and floral spice. While already approachable in its youth for its perfume and brightness, the structure and acidity suggest a solid aging potential of 6–8 years from vintage, during which it will gain further aromatic nuance and textural harmony.
Production
Domaine de la Cras farms vineyards on the limestone-rich hillsides surrounding Dijon, an area historically recognized for high-quality Burgundy but only recently re-emerging on the fine wine map. The terroir is defined by thin topsoils over hard limestone and marl, with breezy exposures that preserve acidity and ensure slow, even ripening. Grapes for Hermaion 2022 are harvested by hand at optimal maturity, with strict sorting in the vineyard and at the cellar to retain only healthy, perfectly ripe bunches. Vinification follows a minimalist philosophy: indigenous yeasts, gentle extraction with a proportion of whole clusters to enhance aromatic lift and structure, and temperature control to protect freshness. Aging typically takes place in a mix of older Burgundy barrels and larger vessels to avoid excessive oak imprint, allowing the purity of fruit and minerality to shine through before bottling with minimal fining or filtration.

Hermaion 2022 is a versatile partner at the table, particularly suited to refined, flavourful dishes rather than heavy, robust cuisine. It pairs beautifully with roast chicken, duck breast with cherry or orange glaze, veal or pork tenderloin, and delicate game birds. On the lighter side, consider mushroom risotto, truffle-inflected pasta, beetroot dishes, or charcuterie and soft cheeses such as Brie de Meaux, Reblochon or a mild Époisses. Serve at 14–16°C (57–61°F) to highlight its aromatic detail and fresh acidity. A brief decant of 30–45 minutes can help the wine open up, especially in its first few years, but it can also be enjoyed by slowly following it in the glass over an evening.
