Domaine de la Cras is farmed organically, with strong biodynamic influences, and harvesting is typically done by hand to ensure optimal selection of bunches. In the cellar, the philosophy is minimal intervention: gentle pressing, natural fermentations with indigenous yeasts, and aging in a combination of tanks and carefully chosen barrels (often with a restrained use of new oak) to preserve purity and terroir transparency. The result is a finely etched, terroir-driven white that clearly reflects its cool-climate origin.
