Tasting Notes
Expect a vivid, deeply colored red with a poised, elegant profile rather than overt power. The nose typically leans toward ripe red and dark berries, violets, crushed herbs, and a subtle smoky, stony nuance, while the palate is firm but refined, with juicy fruit, fine-grained tannins, and a distinct chalky-mineral backbone. The wine’s structure and complexity suggest excellent aging potential, with the fruit, spice, and earthy notes gaining greater harmony over time. It should continue to develop gracefully for several years, rewarding those who enjoy Cabernet Franc with both freshness and depth.

Production
The grapes come from a single parcel at the top of the Domaine de la Butte vineyard, planted with more than 50-year-old Cabernet Franc vines rooted in compact clay soils mixed with flint, above a deep chalk subsoil. The site is organically farmed and sits at around 100 meters of altitude, helping preserve freshness and concentration. Only perfectly ripe grapes are hand-harvested and meticulously sorted before spontaneous fermentation in wooden and concrete vats, followed by aging with about one-third in large oak casks and the remainder in a combination of smaller vessels.

Food & Serving
This wine pairs beautifully with roasted duck, lamb, game birds, grilled pork, mushroom dishes, and aged cheeses. Serve it at around 16-18°C, and consider decanting for one to two hours if opened young, especially to allow the Cabernet Franc aromatics and structure to fully open.
