Domaine de la Baume’s Elite d'Or Cabernet Sauvignon Marselan 2024 combines the depth of Cabernet Sauvignon with the generous, aromatic character of Marselan. Modern winemaking, fermentation in oak and subsequent French oak ageing give this Pays d’Oc red a powerful style with an exotic bouquet and polished structure. Its roots lie in Domaine de la Baume’s long history, which began with the restoration of its vineyards in 1882.
Tasting Notes
Deep ruby-red in appearance, this wine opens with an intensely expressive bouquet of ripe berries and blackberries, complemented by notes of bay leaf, coffee, toasted bread and chocolate. The palate is full-bodied and flavourful, with concentrated dark-fruit character, supple tannins and a warming, well-integrated oak influence.
The wine’s generous structure makes it enjoyable now, particularly after a little time in the glass, while its fruit concentration and tannic backbone should allow it to develop further over the next few years when stored in suitable conditions.
Production
The Cabernet Sauvignon and Marselan grapes are modernly vinified, beginning with a period of cold maceration to encourage colour and aromatic extraction before fermentation. Alcoholic fermentation takes place in wooden barrels, followed by ageing in French oak barrels, adding layers of spice, toast and chocolate to the wine’s dark-fruited profile. The wine is produced in the Pays d’Oc, in the Languedoc region of southern France, between Béziers and Pézenas.
Food & Serving
A natural partner for richly flavoured meat dishes, this wine pairs well with game, lamb, roasted entrecôte and pasta served with ragù. Serve slightly cool, at approximately 16–18°C, to preserve its freshness and balance. Decanting for around 30–60 minutes is recommended, especially when serving the wine young, to allow its aromas and texture to open.
Producer
Domaine de la Baume traces its modern history to 1882, when Jean Prat took over the estate in southern France. After phylloxera had left the vineyards abandoned, he and his sons restored them, began exporting the wines internationally and opened a wine shop in Paris. Building on this heritage and the character of its terroir, Domaine de la Baume has grown into an established wine house in the heart of Languedoc.
