Description
Domaine de Chevalier 2017 is a refined red Bordeaux from one of Pessac-Léognan’s most respected estates. Classified as a Grand Cru Classé de Graves, it combines the elegance of Cabernet Sauvignon with the depth and polish associated with the gravelly terroirs of the appellation.
Tasting Notes
The wine displays a deep ruby colour with garnet highlights. Its bouquet opens with blackcurrant, blackberry and plum, followed by cedar, graphite, subtle tobacco and delicate smoky nuances. On the palate, it is finely structured yet graceful, offering concentrated dark fruit, fresh acidity and polished tannins. The finish is long and mineral, with hints of spice and well-integrated oak. Already approachable with decanting, the 2017 vintage should develop beautifully over the next 10–15 years.
Production
The vineyards of Domaine de Chevalier are surrounded by pine forest and planted on distinctive gravelly soils, which provide excellent drainage and encourage deep-rooted vines. The blend is led by Cabernet Sauvignon, supported by Merlot and a small proportion of Petit Verdot. Grapes are carefully harvested by hand and vinified parcel by parcel, followed by maturation in French oak barrels to refine the tannins while preserving the wine’s freshness, aromatic detail and mineral character.
Food & Serving
Serve at 16–18°C after decanting for approximately one to two hours, particularly while the wine is young. Its structure and savoury complexity make it an excellent match for roast lamb, grilled or roasted beef, duck, venison and dishes featuring mushrooms or truffles. It can also be enjoyed with mature hard cheeses.
