Tasting Notes
In the glass, this Gevrey-Chambertin shows a luminous, medium ruby color with youthful garnet hints at the rim. The nose is immediately inviting, offering layers of wild raspberry, red cherry and crushed strawberry, intertwined with notes of rose petal, wet stone, subtle game, and a touch of sweet spice and fine vanilla from its time in oak.
On the palate, it is medium-bodied yet firmly structured, with vibrant red fruit, blackcurrant and a hint of black cherry framed by fine, chalky tannins. Savory nuances of forest floor, dried herbs and a delicate smokiness add depth and complexity. The acidity is fresh and linear, giving the wine energy and length, while the finish lingers with notes of spice and mineral. Production
Sourced from carefully selected parcels in the Gevrey-Chambertin appellation, this wine reflects the classic mix of limestone and clay soils that give Pinot Noir both aromatic lift and structural backbone. The vineyards are farmed with close attention to soil health and low yields, ensuring concentrated, characterful fruit. Harvesting is typically done by hand to allow for strict sorting of bunches in the vineyard and at the winery. After gentle destemming, the grapes undergo a temperature-controlled fermentation in vats, with regular punch-downs or pump-overs to extract color, aroma and fine tannins. The wine is then aged in French oak barrels—only a portion of which are new—to enhance complexity and texture without overwhelming the purity of the fruit, before being bottled with minimal intervention to preserve the expression of terroir.
Food & Serving
This Gevrey-Chambertin 2021 is a superb partner for classic Burgundian fare such as coq au vin, roast duck or guinea fowl, as well as dishes featuring mushrooms, truffle, or root vegetables. It also pairs beautifully with veal, lamb chops, game birds, and mature hard cheeses like Comté or aged Gruyère. Serve at around 15–16°C (just below room temperature) to highlight the wine’s aromatic detail and freshness. A short decant of 30–45 minutes is recommended in its youth to allow the bouquet to open and the tannins to soften, particularly if you’re serving it with richer, more savory dishes.
