Tasting Notes
In the glass, the 2017 Bonnes Mares presents an unusually deep, saturated ruby hue for the vintage, hinting at its underlying power and density. The nose opens with dark cherry and wild berry compote, followed by blackcurrant, peony blossom, and a touch of caramelized orange peel. Layers of dark chocolate and subtle spice add complexity and a sense of luxurious richness. On the palate, this is medium to full-bodied with a precise, pure core of dark fruit framed by finely etched, chalky tannins. The texture is both ample and refined, giving the wine a graceful, flowing character rather than overt weight. Juicy acidity keeps the profile lifted, while the long, fragrant finish echoes notes of dark berries, floral tones, and cocoa. Sourced from the grand cru Bonnes Mares, straddling the communes of Chambolle-Musigny and Morey-Saint-Denis, this wine benefits from a complex mosaic of clay-limestone soils that naturally combine power with finesse. The vineyard’s stony, chalk-rich subsoils contribute both the wine’s deep color and its firm, mineral-driven backbone. Grapes are harvested by hand at optimal ripeness, with rigorous sorting to ensure only perfectly healthy, concentrated fruit makes it into the cuvée. Fermentation takes place in traditional vats, with no more pigeage than usual in 2017 despite the exceptional color and density of the must, preserving purity and elegance over extraction. Aging in French oak (with a judicious proportion of new barrels) allows the wine to develop depth and aromatic complexity while maintaining the domaine’s signature restraint and balance.

Food & Serving
This Bonnes Mares is a superb match for refined dishes that can stand up to its structure and intensity: roast duck with cherries, pigeon or squab, veal sweetbreads, truffled poultry, or game birds in red wine jus. It also pairs beautifully with earthy preparations featuring wild mushrooms or root vegetables, and with well-aged hard cheeses such as Comté or aged Gouda. Serve at 15–16°C (59–61°F) to highlight its aromatic complexity and freshness. Decanting for 1–2 hours in its youth can help the wine unfold its floral and citrus-inflected nuances; with extended bottle age, a shorter, gentle decant primarily for sediment management is recommended.
