Domaine Chevigny-Rousseau, Fixin 2021

Domaine Chevigny-Rousseau’s Fixin 2021 is a refined red Burgundy from a family-owned estate established in 1947. Made in the traditional Burgundian style, it combines vibrant red-fruit character with floral aromas, gentle spice and a structured palate—an expressive example of the Côte de Nuits terroir.

Tasting Notes
The wine shows an intense, clear garnet-red colour. On the nose, aromas of ripe cherries are joined by delicate violet notes and a subtle touch of spice, creating an inviting and distinctly Burgundian profile. Powerful in its youth, the palate is rounded and well structured, with smooth tannins, balanced fruit and a lingering finish. It is approachable now with a little air, but should develop additional savoury and earthy complexity over the next 5–8 years when properly stored.

Production
The estate’s vineyards are spread across a mosaic of valued parcels in Burgundy, including sites around Vosne-Romanée and Fixin. The grapes are harvested by hand and the wine is made according to traditional Burgundian methods. It is matured for approximately 12–18 months, with around 30% of the wine aged in new French oak, adding depth and gentle spice while allowing the terroir to remain at the forefront.

Food & Serving
Enjoy this Fixin with roasted poultry, duck, pork tenderloin, veal, mushroom dishes or classic Burgundy specialities such as coq au vin. Serve slightly cool at around 15–16°C. It can be poured directly from the bottle, but decanting for 30–60 minutes will help soften its youthful structure and open up the cherry and violet aromas.
