Tasting Notes

Production
The fruit comes from En Rosey, a vineyard located at around 350 meters above sea level on the Côte Chalonnaise in Burgundy. This cooler, elevated site helps preserve freshness and aromatic purity in the Chardonnay grapes. After harvest, the wine is matured for 10 months in large 450-liter barrels, followed by five months in stainless steel. This combination allows the wine to gain subtle oak complexity and texture while retaining its bright fruit and mineral clarity.

Food & Serving
This is a highly versatile white Burgundy that works beautifully with both food and solo enjoyment. Pair it with shellfish, grilled fish, roast chicken, creamy poultry dishes, or soft cheeses, and serve it chilled at around 10–12°C. Decanting is not necessary, but a little air in the glass can help open up its aromatics.
