The grapes are harvested with care and the fermentation takes place in temperature-controlled conditions over around three weeks, helping preserve aromatic purity and freshness. A selection on fine lees after homogenization adds texture and depth to the finished wine.

This wine pairs beautifully with goat’s cheese, shellfish, oysters, grilled fish, and light vegetable dishes, especially those with fresh herbs or citrus. Serve well chilled, ideally around 8–10°C, and decanting is not necessary.
