Sourced from the respected Au Champ Salomon parcel in Marsannay, this red marries precision and charm, showcasing the finesse that has made the appellation one of Burgundy’s most exciting insiders’ secrets. With part of the fruit left to macerate as whole berries, it captures both aromatic lift and textural depth in the glass.

Tasting Notes
In the glass, the 2021 Au Champ Salomon shows a vibrant, translucent ruby hue, typical of fine Pinot Noir from cooler Burgundy sites. The nose is expressive and detailed, with layers of wild raspberry, red cherry and cranberry joined by hints of rose petal, crushed strawberry, and a subtle spice note—think white pepper, clove and a touch of forest floor. On the palate, this is elegant and finely etched rather than opulent, with juicy red fruit at the core, supported by bright acidity and silky, well-integrated tannins. The 25% whole-berry maceration contributes a succulence and gentle grip, giving the wine a playful, mouthwatering energy while preserving its refinement. Delicate notes of sous-bois, chalky minerality and a whisper of oak evolve with air, leading into a persistent, precise finish. Enjoyable now for its freshness and aromatic purity, it should continue to develop additional complexity over the next 5–8 years under good cellaring conditions.

Production
Au Champ Salomon lies within the Marsannay appellation at the northern end of the Côte de Nuits, where cooler breezes and limestone-rich soils help yield Pinot Noir of lift and tension. Domaine Bart works with 100% Pinot Noir, harvested by hand to ensure optimal selection in the vineyard and on sorting tables. In 2021, approximately a quarter of the berries were left whole for maceration during fermentation, encouraging a more aromatic profile and refined tannic structure. Traditional Burgundian vinification in temperature-controlled vats preserves the purity of fruit, followed by maturation in French oak barrels (often with a modest proportion of new oak) to add subtle texture and complexity without overshadowing the terroir-driven character of Marsannay.

Food & Serving
This Marsannay is a versatile partner at the table, ideal with dishes that echo its finesse and bright red-fruit profile. Think roast chicken with herbs, duck breast with cherry or berry jus, pork tenderloin, veal chops, or classic Burgundian fare like coq au vin and rabbit terrine. It also pairs beautifully with mushroom-based dishes, grilled salmon or tuna, and semi-soft cheeses such as Comté, Tomme or mild washed-rind cheeses. Serve at around 14–16°C (57–61°F) to highlight its aromatic delicacy and freshness. A short decant of 20–30 minutes can help the wine open up, especially in its youth, revealing more floral and mineral nuances.
