Tasting Notes
In the glass, the 2021 Clos des Mouches shows a translucent ruby hue with garnet highlights, typical of a finely wrought Pinot Noir. The nose opens with lifted red fruit—wild strawberry, red cherry and pomegranate—layered with violet, rose petal, and subtle notes of forest floor, sweet spice and a hint of orange zest. On the palate, this is precise and silky rather than heavy, with a fine-boned structure and a core of pure, vibrant red fruit. Taut, chalky tannins and fresh acidity give the wine a lively, mouthwatering profile, while delicate nuances of white pepper, dried herbs and a touch of mineral salinity linger on the finish. The 2021 vintage offers immediate charm, but the balance and structure suggest it will evolve gracefully for 8–12 years, gaining complexity and more tertiary notes of sous-bois and truffle over time.

Clos des Mouches is one of Beaune’s most celebrated Premier Crus, sitting on well-drained, limestone-rich soils with clay and marl that are ideal for Pinot Noir. Grapes are typically hand-harvested in small crates to protect the delicate fruit, followed by careful sorting at the cellar to retain only the healthiest bunches. Vinification focuses on finesse rather than extraction: a traditional Burgundian approach with gentle destemming (sometimes retaining a portion of whole clusters, depending on the vintage), a cool pre-fermentation maceration to draw out aroma and color, and fermentation in open vats with punch-downs or pump-overs kept moderate. The wine is then matured in French oak barrels—often with a judicious use of new oak—to add texture and subtle spice without overwhelming the purity of the fruit or the expression of terroir.
