Les Saint-Georges lies at the southern end of Nuits-Saint-Georges on classic Burgundian limestone and marl, with well-drained, stony soils that naturally limit yields and produce concentrated, structured wines. The vines here typically include a significant proportion of older plantings, giving small berries with excellent flavor intensity. Grapes are picked by hand at optimal ripeness to preserve purity and balance, then carefully sorted in the cellar. Vinification at Domaine A.F. Gros traditionally involves a gentle, temperature-controlled fermentation with partial destemming (depending on the vintage), allowing for a measured extraction of color, tannin, and aromatics. The wine is then aged in French oak barrels—often including a judicious proportion of new oak—to add complexity and texture without overwhelming the terroir, before being bottled with minimal intervention to retain its character and structure.
