Tasting Notes

Production
Dom Pérignon Rosé 2008 is made from Chardonnay and Pinot Noir sourced from Champagne, with a notable proportion of Pinot Noir vinified as red wine to create the rosé color, texture, and structure. The cool growing season contributed to naturally high acidity and pronounced aromatic intensity, while extended bottle aging—over 12 years—allowed the wine to develop finesse, complexity, and a more seamless mousse.
Food & Serving
This is a superb Champagne for refined dishes such as salmon, duck, Asian-inspired meat preparations, or mature cheeses. Serve it at 10–12°C, and decanting is generally not necessary, though a short rest in the glass can help the aromas unfold fully.
