As one of the smallest productions in the house’s history, the 2017 vintage carries both rarity and distinction.

Tasting Notes
In the glass, Dom Pérignon 2017 shows a darker, more concentrated profile than many recent vintages, with a fine, persistent mousse and a polished golden hue. The nose opens with citrus, dried apricot, toasted brioche, hazelnut, and subtle hints of cocoa and smoke, all signatures of the house’s reductive, layered style. On the palate, it is silky and vibrant, with a creamy texture that feels almost weightless yet firmly structured. Ripe fruit is continually lifted by vivid acidity, leading to a long, energetic finish marked by candied citrus and a refined mineral edge. While already captivating, it also has the structure to evolve beautifully in bottle over time.

Production
The 2017 growing season in Champagne was defined by dramatic contrasts: spring frost, a hot and dry summer, and late-season rain created difficult conditions in the vineyard. Chardonnay emerged with exceptional maturity, while Pinot Noir required very strict selection, resulting in a low-yield vintage of impressive concentration and purity. Vinification follows Dom Pérignon’s meticulous house style, emphasizing precision, balance, and the layered complexity that comes from extended ageing on the lees.

Food & Serving
This is a champagne that deserves thoughtful pairings, such as oysters, lobster, scallops, caviar, sushi, or delicate poultry dishes with a rich sauce. It also works beautifully with truffle dishes, mature hard cheeses, or simply as a refined aperitif. Serve chilled at around 8–10°C, and while decanting is generally not necessary, allowing it a few minutes in the glass can help reveal its full aromatic depth.
