Tasting Notes
In the glass, it shows the poised brightness you’d expect from a fine Champagne, with an aromatic profile that moves from fresh green and floral tones into riper stone fruit and subtle spice. Notes of eucalyptus, mint, mirabelle plum, apricot, orange blossom, pepper, cardamom and a faint saline, toasted edge create a layered and sophisticated bouquet.
On the palate, the wine is elegant and precise, yet generous in mouthfeel. The texture is silky and refined, with beautifully integrated acidity, notable breadth and a long, saline finish that leaves a deep impression. This is a Champagne with excellent aging potential, and its structure suggests it will continue to gain complexity over time.
Production
2013 was shaped by a cold, wet winter, a rainy spring and a delayed growing cycle, followed by a hot, dry summer and a late September marked by rain and protective east winds. The grapes were harvested between 28 September and 15 October, with chalk-rich soils helping buffer the effects of the weather, especially in Dom Pérignon’s Grand Cru and Premier Cru vineyards. Chardonnay came from the Côte des Blancs, bringing elegance and purity, while Pinot Noir from the Montagne de Reims added firmness, precision and rounded structure.
Dom Pérignon is made exclusively from vintage fruit and aged in the cellars for at least eight years before release as Plénitude 1. The 2013 vintage is defined by the creative blending of contrasts: richness and acidity, tension and generosity, all brought into harmony through careful vinification and long maturation.
Food & Serving
This Champagne pairs beautifully with refined dishes such as oysters, scallops, lobster, sashimi, caviar, roast poultry or creamy risotto, as well as lightly spiced seafood or truffle-based plates. Serve chilled at around 8-10°C, and consider opening or decanting very gently if you want to let the aromas open further, though it is typically best enjoyed directly from the bottle to preserve its fine mousse and precision.
