Dom Brial, Rivesaltes Rivesaltes Ambré nvt NV

Dom Brial Rivesaltes Ambré is a richly expressive French vin doux naturel from the Pyrénées-Orientales, distinguished by its deep amber colour and luscious profile of candied fruit, honey and dark chocolate. Made in a warm Mediterranean setting and rooted in the traditions of the Dom Brial growers’ collective since 1932, it offers a characterful taste of southern Roussillon.

Tasting Notes
Brilliant deep amber in the glass, this Rivesaltes Ambré opens with inviting aromas of vanilla, chocolate and dried banana. The palate is silky and full-bodied, combining generous notes of candied fruit and honey with a satisfying dark-chocolate finish. As a non-vintage fortified wine, it is crafted for immediate enjoyment and can also develop additional complexity when carefully cellared. Its rich, mature style makes it particularly appealing to those who enjoy sweet wines with nutty, caramelised and dried-fruit character.

Production
The vineyards associated with Château les Fontaines—formerly known as Mas de Les Fonts in Catalan—are located in Calce, in the north-eastern Pyrénées-Orientales. The vines benefit from a warm Mediterranean climate and the distinctive terroir of Roussillon. The grapes are directly pressed and cold-settled before alcoholic fermentation in concrete tanks. Mutage, the addition of spirit to stop fermentation, preserves the wine’s natural sweetness and contributes to its fortified character.

Food & Serving
Serve lightly chilled at around 10–12°C. Its sweetness and depth make it an excellent partner for foie gras, blue cheeses and desserts such as tarte Tatin, while its chocolate and dried-fruit notes also complement caramelised or nut-based desserts. Decanting is generally not necessary, although a brief airing can help the aromas open in the glass.
