Tasting Notes
In the glass, Diebolt-Vallois Extra Brut Tradition shows a pale straw to light golden hue, with a lively, persistent stream of fine bubbles. On the nose, it offers an elegant bouquet of green apple, lemon zest, white flowers, and chalky minerality, supported by hints of brioche, almond, and a touch of pear. The palate is precise and vibrant, with a lean, mineral-driven profile that is both refreshing and layered. Crisp citrus and orchard fruits—think Granny Smith apple, quince, and citrus peel—are wrapped in a subtle creaminess from time on the lees, while the Pinot varieties add gentle red-fruited nuance and texture. Diebolt-Vallois is based in the Côte des Blancs, one of Champagne’s most revered terroirs, known for its chalk-rich soils and cool climate that are ideal for high-class Chardonnay. The grapes for the Extra Brut Tradition are carefully harvested by hand to ensure optimal ripeness and selection in the vineyard. Fermentation typically occurs in temperature-controlled stainless steel to preserve aromatic freshness, followed by extended aging on the lees to build texture and complexity. The final blend of Chardonnay, Pinot Noir, and Pinot Meunier is assembled with an emphasis on balance and finesse, then finished with an Extra Brut dosage to let the purity of the fruit and the chalky terroir shine through.

Food & Serving
This Extra Brut Champagne is a natural partner for refined, subtly flavored dishes. Serve it alongside oysters, sashimi, ceviche, or fresh seafood platters, or pair it with goat cheese, sushi, lightly fried tempura, and delicate poultry or vegetable terrines. Its clean, mineral edge also works beautifully with simple pasta dishes featuring lemon, herbs, or shellfish. For ideal enjoyment, serve well-chilled at around 8–10°C (46–50°F).
