The fruit for Dettori Moscadeddu comes from the Badde Nigolosu cru in Romangia, in northern Sardinia, where old-vine Moscato Bianco grows on poor, sandy-limestone and decomposed sandstone soils at modest altitudes. The terroir is strongly influenced by the Mediterranean climate—sun-drenched days, cooling breezes and significant diurnal shifts—which help concentrate flavours while preserving acidity. Grapes are farmed organically and biodynamically in practice, with low yields and hand-harvesting at full physiological ripeness to capture both aromatics and natural sugar. In the cellar, Dettori follows a minimalist, traditional approach: spontaneous fermentation with indigenous yeasts, often with extended skin contact, in neutral vessels (typically concrete) to avoid masking the grape and site. The wine is matured patiently on its lees, without fining or filtration, and with little to no added sulphur, resulting in a dessert wine that is both rustic in spirit and remarkably pure in expression.
