Derot Delugny sources grapes from selected vineyard plots in the Champagne region, where cool northern conditions and chalk-influenced soils provide the tension and finesse essential to great sparkling wine. Chardonnay brings clarity and lift, while Pinot Meunier, well suited to slightly cooler or more clay-rich sites, contributes generosity and aromatic charm. Grapes are typically harvested by hand at optimal ripeness to preserve delicate aromas and maintain natural acidity. After gentle pressing, the base wines are vinified separately by variety and parcel, then carefully blended and bottled for secondary fermentation. Extended aging on the lees allows the wine to develop its hallmark brioche, biscuit and nutty complexity before disgorgement and a balanced Brut dosage.
