This cuvée stands out for its fine, persistent mousse, precise structure, and a wonderfully pure expression of fruit and minerality. Rooted in the rolling hills of Lombardy, it reflects the region’s long history of quality sparkling wine production and its rising reputation as Italy’s answer to Champagne.

Tasting Notes
In the glass, this Franciacorta reveals a luminous straw-yellow color with subtle green highlights and an exceptionally delicate, persistent bead of bubbles. The nose is refined and layered, offering aromas of ripe citrus, green apple, white peach, and pear, intertwined with notes of acacia blossom, fresh brioche, and a touch of almond and chalky minerality. On the palate, Derbusco Cives Blanc de Blanc Brut is both vibrant and creamy, with a fine mousse that wraps around flavors of lemon zest, crisp apple, and stone fruit. Hints of pastry, hazelnut, and a saline, mineral edge add complexity and length. The balance between refreshing acidity and subtle autolytic richness makes this wine both immediately approachable and capable of evolving gracefully over the next several years, gaining more toast, nuttiness, and depth with time in bottle.

Production
Sourced from selected Chardonnay vineyards in the heart of Franciacorta, this wine benefits from the area’s characteristic morainic soils—rich in minerals and well-drained—shaped by ancient glaciers around Lake Iseo. The microclimate, moderated by the lake and cooled by Alpine breezes, allows grapes to ripen slowly while preserving freshness and aromatic intensity. Grapes are harvested by hand at optimal maturity, with careful selection in the vineyard and on sorting tables. Fermentation typically takes place in temperature-controlled stainless steel (with a portion possibly in oak, depending on the cuvée) to preserve the purity of fruit, followed by secondary fermentation in bottle according to the traditional method. The wine rests sur lie for an extended period, allowing autolysis to build texture, complexity, and a fine, persistent mousse before disgorgement and a carefully judged brut dosage.

This Blanc de Blanc Brut is a versatile partner at the table, shining alongside delicate seafood such as oysters, scallops, prawns, and crudo, as well as sushi, sashimi, and fine white fish dishes. It also works beautifully with soft cheeses, vegetable tempura, light poultry preparations, and refined appetizers or canapés. Serve well chilled at around 6–8°C (43–46°F) to emphasize its tension and freshness. A brief 5–10 minutes in the glass or an elegant sparkling wine decanter can help the aromas open up, but extended decanting is not necessary—its charm lies in its precision and vitality.
