Dehesa El Carrascal, Dominio del Pardinal Chardonnay 2024 White

Produced at more than 900 metres above sea level at the foot of the Sierra del Mugrón, Dehesa El Carrascal’s Dominio del Pardinal Chardonnay 2024 combines the freshness of high-altitude viticulture with the richness of four months’ lees ageing. Made from organically farmed Chardonnay, it offers a polished, Mediterranean interpretation of the variety, balancing ripe fruit, creamy texture and lively acidity.

Tasting Notes
The wine has a bright, clear golden-yellow colour with delicate green reflections. Its refined, expressive nose reveals ripe apple, juicy pear and white flowers, complemented by a subtle creamy note from the time spent on its lees. On the palate, it is fresh and harmonious, with vibrant acidity, a smooth, rounded texture and well-integrated depth. Ripe fruit and fine mineral tones carry through to a long, elegant finish. Enjoy it in its youth for its freshness and aromatic clarity; it may also develop additional softness and complexity over the next few years when carefully stored.

Production
The Chardonnay is grown organically in the high-altitude vineyards of Castilla-La Mancha, where cool nights help preserve freshness and stony soils contribute a delicate mineral character. After harvesting, the grapes are carefully vinified to retain their varietal expression, followed by four months of ageing on the fine lees with regular bâtonnage. This process gives the wine added creaminess, body and depth while maintaining its energetic profile.

Food & Serving
An elegant and versatile white, this Chardonnay pairs beautifully with grilled fish, shellfish, creamy pasta dishes, risotto, poultry and mild cheeses. Its freshness also makes it an excellent luxurious aperitif. Serve chilled at approximately 9–11°C. Decanting is not necessary, although allowing the wine a short time in the glass can help reveal its floral and creamy nuances.

Producer
Founded in 1962 by Don Arsenio García Cañada, Bodega Dehesa El Carrascal remains a family-run winery led today by its second and third generations. The estate lies between the villages of Alpera and Bonete, north of the better-known Yecla wine region in southeastern Spain, and has developed from a traditional producer focused on Garnacha Tintorera into a modern winery working with both local and international varieties. Its vineyards include predominantly old vines, many more than 50 years old, alongside plantings of Merlot, Syrah and Chardonnay.
