The iconic “Cordon Bleu” name and label pay homage to the blue ribbon of the Order of the Holy Spirit, once a powerful symbol among the French aristocracy.

Tasting Notes
In the glass, Cordon Bleu Brut shows a bright, pale golden hue with a fine and persistent mousse. The bubbles are delicate yet energetic, forming a lively bead that hints at its freshness and precision. On the nose, expect an inviting bouquet of ripe orchard fruits—apple, pear, and white peach—layered with citrus zest, brioche, and a touch of roasted nuts and white flowers. The palate is vibrant and well-balanced, combining the structure of Pinot Noir, the finesse of Chardonnay, and the roundness of Pinot Meunier. Production
Sourced from carefully selected vineyards across the Champagne region of France, De Venoge Cordon Bleu Brut reflects a classic Champagne terroir of chalk and limestone, which lends finesse and tension to the wine. The grapes—Pinot Noir, Chardonnay, and Pinot Meunier—are harvested primarily by hand to ensure optimal selection and gentle handling. After pressing, the base wines are fermented in temperature-controlled stainless steel to preserve purity of fruit, then assembled with reserve wines to maintain the house style. The second fermentation takes place in bottle following the traditional méthode champenoise, with extended lees aging to build texture, depth, and those characteristic brioche and pastry notes before disgorgement and dosage.

This Champagne’s balance of freshness and generosity makes it highly versatile at the table. It pairs beautifully with oysters, shrimp cocktail, and delicate white fish, as well as sushi, sashimi, and lightly dressed crab or lobster dishes. It also shines alongside soft cheeses, gougères, poultry in cream sauces, and refined canapés. Serve well-chilled at around 8–10°C (46–50°F) to emphasize its precision and aromatic detail. A brief 10–15 minutes in the glass or an open bottle is usually enough aeration; decanting is not necessary, though pouring into larger-bowled flutes or white wine glasses can enhance complexity.
