De Sousa Champagne Grand Cru Blanc de Blancs Extra Brut Caudalies is a refined expression of Chardonnay from some of the best sites in Champagne. Made entirely from old-vine fruit and vinified in oak, it stands out for its depth, precision, and the signature balance that has made De Sousa a reference for elegant Blanc de Blancs. The use of a permanent reserve dating back to 1995 adds both complexity and continuity, reflecting the house’s commitment to consistency and tradition.

Tasting Notes
In the glass, this Champagne typically shows a bright, pale gold colour with a fine, persistent mousse. The nose is layered and expressive, with notes of citrus zest, white flowers, ripe orchard fruit, toasted almond, and subtle buttery spice from oak ageing. On the palate, it is dry and focused, with a creamy texture balanced by vivid freshness and chalk-driven minerality. The old-vine Chardonnay brings concentration and length, while the Extra Brut style keeps the wine crisp and precise. It should age gracefully for several years, developing even more complexity and nuance over time.

Production
This cuvée comes from Grand Cru vineyards in Champagne, where chalky soils and a cool climate help preserve acidity and finesse in Chardonnay. The vines are over 50 years old, which contributes to the wine’s depth and intensity, and the fruit is vinified exclusively in oak barrels. A permanent reserve base from 1995 is blended in, adding maturity, continuity, and a distinctive house signature to the final wine.

Food & Serving
This Champagne pairs beautifully with oysters, scallops, sashimi, lobster, roasted poultry, and dishes with creamy sauces. It also works well with fine hard cheeses and elegant vegetarian dishes featuring mushrooms or asparagus. Serve chilled at 8–10°C, and while decanting is not necessary, giving it a few minutes in the glass can help the aromas open up.
