Tasting Notes
In the glass, it shows a lively rosé hue with fine, persistent bubbles. The palate is elegant and fruit-driven, with bright acidity that keeps everything fresh and precise. Red berry flavors lead the way, supported by a subtle creamy depth and a long, refined finish. Production
This Champagne is made from Pinot Noir sourced entirely from Grand Cru vineyards around Ambonnay, one of the most respected areas for this grape in Champagne. As a cooperative, De Saint Gall works only with grapes harvested from its own members’ vineyards, ensuring close control over quality and vineyard selection. The wine is produced and aged in deep traditional cellars using classic methods, then disgorged with a dosage of 8 grams per liter for a balanced, dryish style.

Food & Serving
Serve chilled at around 8-10°C. It works especially well with rich seafood, lobster, salmon, duck breast, charcuterie, or dishes with a little spice and intensity. Decanting is not necessary for this wine.
