The De Bonhoste Crémant de Bordeaux is sourced from vineyards in Bordeaux where Merlot and Cabernet Franc thrive on clay-limestone and gravelly soils, which provide both ripeness and freshness—key elements in quality sparkling wine. Grapes are generally harvested by hand at an earlier stage of ripeness than for still reds, preserving bright acidity and delicate fruit character. In the cellar, the wine is produced using the traditional method (méthode traditionnelle): a gentle pressing of whole clusters, followed by a cool primary fermentation to retain aromatics, then a secondary fermentation in bottle to create the natural sparkle. The wine is aged on its lees for several months (often a year or more), building texture and subtle brioche notes before disgorgement and a carefully judged dosage to achieve a balanced, dry style.

It pairs beautifully with seafood—oysters, shrimp, sushi, and lightly seared scallops—as well as smoked salmon, goat’s cheese, charcuterie, and canapés.
