Description

Davaz Pinot Noir 2022 is a dry Pinot Noir from Graubünden's Bündner Herrschaft with cherry, black currant, grapefruit peel and eucalyptus in a 750 ml bottle. It comes from Fläsch, and the wine carries the village through dark fruit and a cool herbal edge. The 12 months in French oak leave a faint smoke mark on the finish.

About the Wine
The Davaz Pinot Noir 2022 comes from Fläsch in Bündner Herrschaft, a small Swiss wine village set above the Rhine valley in Graubünden. Davaz works this wine under sustainable certification, and the Pinot Noir grows on a mix of limestone, clay and schist. The source note points directly to Fläsch, a useful village-level anchor inside Graubünden for this 2022. That soil mix matters in the glass through a firm mineral line, a savoury earth note and a grapefruit-peel bite. The 2022 carries 13.5% alcohol, with enough ripeness for black currant to sit beside the red cherry. After fermentation, the wine spends 12 months in French oak barrels from a mix of new and used wood. The oak feels measured through smoke, spice and a fine toast edge rather than a sweet vanilla coat. Davaz keeps the wine dry, and the barrel time rounds the texture around the peaty and bitter notes in the finish. In this Fläsch Pinot Noir, eucalyptus rises above the fruit after a few minutes in the glass. A faint smoky edge sits on the cherry skin aftertaste.

Tasting Notes
In the glass, Davaz Pinot Noir 2022 shows deep ruby colour and a scent that starts with cherry skin, black currant and a cool eucalyptus lift and a small smoke mark from the barrel. Air brings grapefruit peel, damp earth and a peat-like bitterness that gives this specific Fläsch bottling a darker register than many Swiss Pinot Noirs. The palate is dry and elegant, with red fruit sweetness at the centre and a smoke-lined finish from the 12 months in French oak barrels, a mix of new and used wood. The texture is polished with fine tannin, a savoury peaty undertone and a lingering echo of cherry skin and bitter citrus peel that feels very specific to this Davaz 2022. Drink 2024 to 2029.

Food Pairing
Serve Davaz Pinot Noir 2022 with roast chicken, duck breast or veal chops, especially when the sauce has mushrooms or browned butter and a little thyme. The wine's cherry and black currant centre suits red meat in a restrained style, such as herb-crusted beef fillet or a grilled entrecôte with jus and crisp potatoes. For a Graubünden table, pour it with capuns filled with dried meat and herbs, then finish the plate with a little aged Bündner Bergkäse. Game also fits this bottle, especially venison with juniper, with the eucalyptus and smoky oak meeting the foresty side of the dish. With pasta, choose tagliatelle with rabbit ragù or pappardelle with porcini, where the bitter grapefruit-peel note cuts through the savoury richness and the aged cheese on top.

Producer
Davaz is rooted in Fläsch, and that village focus is the concrete thread to follow in this Pinot Noir from the 2022 vintage, from the dark fruit to the cool herbal edge that rises first. The estate presents Bündner Herrschaft Pinot through clear fruit, polished tannin and careful oak, with the barrel showing as smoke and spice in Davaz Pinot Noir 2022 and leaving a dry toasted line at the finish. For this bottle, the 12-month French oak élevage gives rounded texture, a faint toasted edge and enough savoury grip for the peaty finish that sits under the cherry and black currant after the wine has had air. Davaz also carries sustainable certification for this wine, and the farming note sits beside the limestone, clay and schist listed for its Pinot Noir parcels around the Bündner Herrschaft village of Fläsch. What separates this producer's reading of Pinot Noir is the grapefruit peel and eucalyptus detail, which makes the wine feel tied to one cellar and one Fläsch source after a short decant at the table. Give the wine a few minutes in a broad glass and the producer's hand appears in the middle palate, where cherry skin, black currant and smoke hold a neat line next to the peaty bitterness.
