Damna Lunae Pinot Bianco Spumante Extra Dry is a refined Italian sparkling wine that captures the elegant side of Friuli-Venezia Giulia. The name “Damna Lunae” comes from a Latin expression meaning “the setting of the moon,” a tribute to the lunar cycles that guide the work in the vineyard and cellar.

In the glass, this spumante shows a pale straw-yellow color with shimmering greenish reflections and a persistent stream of fine, lively bubbles. On the nose, it opens with notes of crisp green apple, pear and white peach, wrapped in delicate floral tones of acacia and elderflower, with a subtle hint of citrus zest and fresh bread dough.

Sourced from vineyards in Friuli-Venezia Giulia, this Pinot Bianco benefits from a cool, ventilated climate and well-drained, mineral-rich soils that help retain acidity and finesse in the grapes. Harvest typically takes place in the early hours, often aligned with lunar phases, to preserve aromatic purity and natural freshness. The grapes are gently pressed, and the base wine is fermented at controlled low temperatures in stainless steel to lock in delicate fruit and floral notes. The secondary fermentation, which creates the bubbles, is carried out in pressurized tanks (Charmat/Martinotti method), allowing the winemaker to preserve Pinot Bianco’s crisp, aromatic character while achieving an elegant, persistent perlage.
