The grapes for D'Addario Nero di Troia Casale Ciliani 2021 are sourced from vineyards in Puglia’s sun-drenched Apulia region, where warm days, cool night breezes from the nearby Adriatic and predominantly limestone- and clay-rich soils help Nero di Troia achieve excellent ripeness while retaining freshness. The fruit is typically harvested by hand at optimal phenolic maturity to preserve both aromatic purity and structural balance. After careful sorting, the grapes undergo temperature-controlled fermentation to extract color, aroma and fine tannins without harshness. Maceration on the skins is managed gently to respect the natural character of the variety, followed by maturation in stainless steel and/or neutral vessels to keep the focus on fruit, terroir and the grape’s distinctive personality rather than heavy oak influence.
