Tasting Notes
In the glass, the 2019 Zottorinoto Riserva shows a luminous, transparent ruby to garnet hue, typical of Nerello Mascalese grown at altitude. The rim is slightly brick-tinged, hinting at its evolution and time in barrel, while still bright and vibrant at the core. The nose is aromatic and lifted, with notes of wild red cherry, pomegranate and crunchy raspberry layered over dried rose petals, violets and blood orange peel. Subtle savoury elements of smoked tea, dried herbs, leather and graphite emerge with air, framed by a distinct volcanic minerality—think warm stones and a faint hint of ash. On the palate, this is a finely etched, medium-bodied wine with a silky yet taut texture. The red and black fruits are pure and precise—sour cherry, red currant and a touch of wild strawberry—interwoven with spice tones of white pepper, clove and a whisper of sweet tobacco from its time in oak. The tannins are firm but very finely grained, giving a refined grip that carries the wine through a long, sapid finish marked by saline, mineral notes and a lingering echo of citrus zest and dried flowers. The acidity is vibrant, lending great freshness and tension. The 2019 vintage offers excellent aging potential: while already approachable with a brief decant, it will continue to gain complexity and harmony over the next 8–12 years, and well-cellared bottles could evolve gracefully beyond that, developing more tertiary notes of forest floor, truffle and leather.

Production
The Zottorinoto vineyard lies on Mount Etna’s northern slopes in Sicily, at high altitude where vines are rooted in deep, decomposed lava and ash. This volcanic terroir, combined with significant diurnal temperature swings and constant breezes, yields grapes with naturally high acidity, aromatic intensity and a strong mineral imprint. Nerello Mascalese vines here are often older and low-yielding, producing concentrated but finely structured fruit. Harvest is typically done by hand, parcel by parcel, to ensure optimal ripeness and careful selection of bunches—a crucial step given Etna’s challenging, mountainous terrain. In the cellar, Cottanera vinifies Nerello Mascalese traditionally but with modern precision: gentle crushing, temperature-controlled fermentation with maceration on the skins to extract fine tannins and aroma without harshness, and frequent tasting to guide the length of contact. The wine is then aged as a Riserva in oak—often large casks and selected barrels—long enough to integrate tannins, add complexity and structure, while preserving the grape’s natural elegance and purity of fruit. After barrel aging, additional time in bottle allows the components to knit together before release.

Food & Serving
Cottanera Etna Rosso Zottorinoto Riserva 2019 is extremely versatile at the table, pairing beautifully with refined yet flavourful dishes. It shines alongside grilled or roast lamb, veal chops, or pork loin with Mediterranean herbs, as well as game birds, duck breast and earthy mushroom-based dishes. Classic Sicilian pairings could include caponata, pasta with wild fennel sausage, or slow-braised ragù over fresh pasta. It also complements aged cheeses such as Pecorino, Parmigiano Reggiano and semi-hard goat cheeses. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and fine structure. Decanting for 45–60 minutes is recommended, especially in its youth, to allow the wine to open fully and soften the tannins. Use a Burgundy or large Bordeaux-style glass to give the aromas space to develop and to appreciate the wine’s nuanced layers.
