This Second Growth from the 1855 Classification marries Cabernet Sauvignon, Merlot and Cabernet Franc in a style that leans into the freshness and precision of the 2021 vintage rather than sheer power. Expect a refined, structured claret that is built for the cellar but already shows impressive charm in its youth. What sets the 2021 apart is its cooler-vintage elegance: vibrant fruit, lifted aromatics and beautifully judged oak, delivering complexity without heaviness. The gravel and clay soils of Saint-Estèphe bring a distinctive mineral backbone and firm yet polished tannins that distinguish Cos from its Médoc peers. With a history stretching back to the early 19th century, Cos d'Estournel has long been celebrated as one of the Médoc’s most exotic and ageworthy wines, and the 2021 continues that legacy with a more classical, finely detailed profile.

Tasting Notes
In the glass, the 2021 Cos d'Estournel shows a deep, shimmering garnet color with violet reflections at the rim, hinting at both concentration and youthful energy. The nose is refined and layered: blackcurrant, wild blackberry and red cherry interlace with notes of graphite, cedar, cigar box and fresh tobacco leaf. Hints of violet, crushed stone, subtle clove and a touch of dark cocoa emerge with air, underlining the wine’s complexity and the precision of its élevage. On the palate, this is a medium to full-bodied, finely chiseled Saint-Estèphe with a cool-fruited profile: juicy cassis, black cherry and plum framed by lively acidity and a long, saline, mineral-driven finish. The tannins are firm yet remarkably silky, giving the wine both structure and finesse. Oak is beautifully integrated, adding gentle spice and toast without overshadowing the fruit. The 2021 has excellent aging potential; while approachable after a few hours in a decanter, it will develop greater aromatic complexity and textural harmony over 10–20 years, and top bottles from good cellars can comfortably age beyond that horizon.

Production
Cos d’Estournel’s vineyards lie on one of the highest gravelly ridges in the northern Médoc, just south of the border with Pauillac, where deep layers of gravel over clay and limestone provide superb drainage and naturally restrict yields. This unique terroir, exposed to the Gironde estuary, promotes slow, even ripening of Cabernet Sauvignon, while the underlying clay lends both power and freshness, particularly valuable in a cooler year like 2021. Grapes are picked parcel by parcel at optimal ripeness, often by hand, with rigorous sorting to ensure only pristine fruit makes it into the grand vin. Vinification takes place in a combination of temperature-controlled stainless steel and concrete vats, with careful extraction to preserve finesse rather than maximize power. The wine is then aged in French oak barriques, a significant proportion of them new, for around 14–18 months, during which time regular tastings guide rackings and blending to achieve Cos d’Estournel’s signature balance of intensity, spice and elegance.

Food & Serving
Cos d'Estournel 2021 is a classic partner for refined meat dishes such as roast lamb with herbs, dry-aged ribeye, beef Wellington, or slow-braised beef cheeks. It also pairs beautifully with game birds, venison, truffle-infused dishes, mushroom ragouts and hard cheeses like Comté, aged Gouda or mature Cheddar. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and polished tannins. For current drinking, decant 1–2 hours before serving to allow the wine to unfurl its layers; as it matures in bottle, a shorter decant of around 30–45 minutes will typically be sufficient to awaken the bouquet and soften the edges.
