Corte Ibla 1697 Rosso Appassimento Bio 2024 is a rich, sun-soaked Sicilian red that captures the intensity of Nero d’Avola through the traditional appassimento method. Made from organically grown grapes in the famed Vittoria area, it balances generous fruit, supple texture, and a distinct sense of place. The name “1697” is a nod to the deep-rooted wine culture of the region, where centuries of craftsmanship meet a new generation of sustainable winemaking.

Tasting Notes
In the glass, this Rosso Appassimento shows a deep ruby color with violet hues, hinting at its concentration and youth. The nose is expressive and inviting, with aromas of ripe black cherry, sun-dried plum, and blackberry compote, wrapped in notes of sweet spice, licorice, cocoa, and a touch of Mediterranean herbs. On the palate, the partially dried Nero d’Avola grapes deliver a plush, velvety mouthfeel and a generous core of dark fruit—think black cherries, figs, and baked berries—balanced by refreshing acidity and soft, rounded tannins. Subtle hints of vanilla, chocolate, and warm spices linger on a persistent finish. Production
The grapes for Corte Ibla 1697 Rosso Appassimento Bio 2024 come from organically farmed vineyards around Vittoria in southeastern Sicily, an area often called a “Winemaker’s Paradise” thanks to its red, mineral-rich soils, rolling hills, cooling sea breezes, and abundant sunshine. Carefully selected Nero d’Avola clusters are harvested at optimal ripeness, with a portion then left to dry using the traditional appassimento method, concentrating sugars, flavors, and aromatics. After gentle pressing, fermentation takes place at controlled temperatures to preserve fruit purity, followed by maturation in tanks and/or a mix of vessels that enhance texture and complexity while maintaining the wine’s fresh, vibrant profile. Sustainable practices are central here, including the use of naturally grown favino beans as green manure instead of conventional fertilizers.

Food & Serving
This generous Sicilian red is a natural match for richly flavored cuisine such as grilled lamb chops, slow-cooked beef ragù, spicy Sicilian sausage, or wood-fired pizzas with cured meats and aged cheeses. It also pairs beautifully with hearty vegetarian dishes like baked aubergine Parmigiana, mushroom lasagna, or roasted root vegetables with herbs. Serve at around 16–18°C; if the wine is young and just opened, a short decant of 30 minutes helps it open up, softening the tannins and allowing the dark fruit and spice notes to fully emerge.
