Carefully selected Nero d’Avola clusters are harvested at optimal ripeness, with a portion then left to dry using the traditional appassimento method, concentrating sugars, flavors, and aromatics. After gentle pressing, fermentation takes place at controlled temperatures to preserve fruit purity, followed by maturation in tanks and/or a mix of vessels that enhance texture and complexity while maintaining the wine’s fresh, vibrant profile. Sustainable practices are central here, including the use of naturally grown favino beans as green manure instead of conventional fertilizers.
