Tasting Notes
This Extra Brut shows a finely tuned balance of richness and elegance, with a lively, precise mousse and a sophisticated, dry finish. Expect bright citrus, green apple, white flowers, and subtle hints of brioche, almond, and mineral nuance, all framed by the depth that comes from long bottle aging. On the palate, Chardonnay and Pinot Noir work in harmony to give both freshness and structure, with a layered texture and a clean, persistent finish. It is a sparkling wine with considerable aging potential, and its complexity is expected to broaden further with time in bottle.

Food & Serving
Serve well chilled at around 8–10°C. It pairs especially well with oysters, shellfish, sushi, delicate seafood starters, and rich dishes such as creamy risotto, roasted poultry, or aged hard cheeses. Decanting is not recommended; instead, open shortly before serving to preserve its freshness and fine bubbles.
