Tasting Notes

Production
The grapes come from Madrid’s high-altitude vineyards, where cooler conditions help preserve freshness in Albillo Real, a variety known for being expressive but unpredictable. The fruit was harvested in August and fermented in stainless steel before spending one year in sherry casks and a further year in glass demijohns, a combination that builds texture and highlights the wine’s subtle biological-aging character.

This is a versatile white for dishes that can match its texture and savoury depth. It works especially well with roast poultry, grilled fish, seafood with creamy sauces, aged cheeses, and Mediterranean dishes featuring almonds, herbs or olive oil. Serve chilled, ideally around 10–12°C, and consider a short decant if you want to open up its aromatic complexity.
