Sourced from the single vineyard Bordini, this wine combines Barbaresco’s trademark elegance with the structure and depth that serious collectors look for. It stands out for its purity of fruit, precise tannins and the classic, aromatic complexity that has made Barbaresco a benchmark for world‑class reds.

Tasting Notes
In the glass, the 2021 Bordini shows a luminous garnet core with brick-tinged edges, typical of well-made Nebbiolo. The nose opens with rose petals, violet, and wild strawberries, followed by notes of red cherry, blood orange, anise, and a delicate hint of tar and crushed stone. Subtle layers of sweet spice, cedar and dried herbs emerge with air. On the palate, this Barbaresco is finely etched and graceful, with a medium to full body and vibrant acidity. Silky yet assertive tannins frame flavors of sour cherry, pomegranate, and raspberry, supported by savory undertones of tobacco leaf, licorice, and earthy minerality. The finish is long and precise, with lingering floral and citrus peel notes that promise further complexity with time. While already approachable in its youth, the 2021 Bordini has the structure and balance to age gracefully for 10–15 years, gaining additional tertiary nuances of leather, truffle, and dried flowers.

Production
Bordini is a prized single vineyard in Neive, within the Barbaresco appellation, where Nebbiolo thrives on calcareous marl and sandy soils at good altitude and exposure. This terroir lends both aromatic lift and refined tannins to the wine. Grapes are typically harvested by hand, with careful selection in the vineyard and at the winery to ensure only perfectly ripe, healthy bunches make it into the fermentation tanks. Vinification follows traditional Piedmontese principles: a temperature-controlled fermentation and maceration on the skins to gently extract color, tannin, and aromatics, followed by aging in predominantly large Slavonian or older oak casks to preserve Nebbiolo’s purity and finesse. The result is a Barbaresco that is both classically styled and beautifully transparent to its site.

Food & Serving
Cogno Barbaresco Bordini 2021 is a superb partner for refined, savory dishes such as veal roast, braised beef, lamb chops with rosemary, or classic Piemontese specialties like tajarin with truffle and brasato al Barolo. It also works beautifully with mushroom risotto, game birds, and aged cheeses such as Parmigiano Reggiano or mature Tome. Serve at 16–18°C (60–64°F) in large Burgundy or Nebbiolo stems to allow the bouquet to unfold. Young bottles benefit from 1–2 hours of decanting to soften the tannins and fully reveal the wine’s aromatic detail.
