Tasting Notes
In the glass, the Coessens Largillier 2018 shows a luminous, pale golden hue with subtle copper glints, underpinned by a fine, persistent bead of delicate bubbles. The nose is expressive yet refined, offering scents of ripe red apple, Williams pear, and white peach, layered with notes of brioche, toasted hazelnut, and delicate spice. Hints of chalk, wet stone, and a whisper of floral tones add complexity and lift. On the palate, this Extra Brut is precise and focused, with a dry, mouthwatering profile and a beautifully balanced structure from the Pinot Noir. Expect flavours of orchard fruit, fresh citrus, and wild strawberry, wrapped in a chalky minerality that runs through the mid-palate into a long, saline finish. Coessens sources this cuvée exclusively from the Largillier lieu-dit in the Côte des Bar, in the southern part of the Champagne region in France. Here, Pinot Noir thrives on clay-limestone soils with a strong Kimmeridgian influence, similar to nearby Chablis, imparting tension, salinity, and a distinctive mineral backbone. Grapes are typically harvested by hand to ensure optimal selection and to preserve berry integrity, an essential step in crafting high-quality Champagne. In the cellar, the juice is gently pressed and vinified parcel by parcel, often with a mix of stainless steel and, in some cases, older oak to build texture while keeping the fruit profile pure. Extended aging on the lees in bottle contributes to the fine mousse and subtle autolytic notes, while the Extra Brut dosage allows the natural balance of the 2018 vintage and the character of Largillier to come through with clarity.

Food & Serving
This is a gastronomic Champagne well suited to refined dishes based on seafood, poultry, and delicately prepared meats. Try it with oysters, turbot, scallops, or lobster, as well as roast chicken, veal tartare, or lightly smoked salmon; it also pairs beautifully with aged Comté or mild, nutty cheeses. Serve chilled but not icy, ideally around 8–10°C (46–50°F), to let the aromatics and texture fully unfold.
