Tasting Notes
In the glass, Largillier Brut Nature typically shows a luminous, pale golden hue with very fine, persistent bubbles—an immediate sign of careful, long lees aging. The nose is focused and detailed, with notes of crisp red apple, Williams pear, lemon zest, and white flowers, layered with hints of chalk, fresh bread dough, and a subtle dried herbal edge that reflects its Pinot Noir roots.
On the palate, this Champagne is taut, dry, and incisive, with no dosage to soften the naturally vibrant acidity. Expect flavors of crunchy orchard fruits, citrus pith, and underripe stone fruit, framed by a pronounced mineral backbone and a delicate, savory nuance—think wet chalk, toasted nuts, and a whisper of spice. Production
Largillier is a single-vineyard Champagne rooted in the clay-limestone and Kimmeridgian marl of the Côte des Bar in southern Champagne—an area particularly well-suited to Pinot Noir. Coessens farms this parcel with a strong focus on expressing terroir, often working with careful, low-yielding vines to concentrate flavor and structure. Grapes are harvested by hand at optimal ripeness, sorted in the vineyard and at the winery to ensure only the best fruit is used. Vinification typically involves gentle pressing of whole clusters, fermentation in stainless steel or a combination of steel and neutral vessels to preserve fruit clarity, followed by extended aging on the lees to build texture and complexity. As a Brut Nature, no dosage is added at disgorgement, allowing the Largillier site, the vintage blend, and the Pinot Noir character to speak with absolute clarity.

This is a gastronomic Champagne that shines alongside food. Its dry, mineral profile is superb with oysters, scallops, and simply prepared shellfish, as well as delicate crudo, sashimi, or tartare.
