Tasting Notes
In the glass, the 2009 vintage is deep and densely colored, with a ripe, almost lustrous core of dark berries and kirsch. The nose is generous and layered, opening with blackberry, cherry liqueur, liquorice, thyme and warm stone notes, all lifted by a subtle mineral edge. On the palate, it is broad, creamy and full-bodied, with ripe, rounded tannins and a long, expansive finish. The wine has already reached a very expressive drinking stage, though its concentration and structure suggest it can continue to develop gracefully for several more years.

Production
Combe des Fous comes from old Grenache vines rooted in the hot, pebbly soils of La Crau, one of Châteauneuf-du-Pape’s most distinctive terroirs. Grenache is vinified in concrete to preserve purity and concentration of fruit, while the supporting varieties are handled to build structure and complexity, with partial ageing in wood. The final blend matures in a combination of stainless steel and large-format casks, allowing the wine to gain polish without heavy oak influence.

Food & Serving
This is an excellent match for rich, flavorful dishes such as slow-roasted lamb, beef short ribs, game, wild mushroom dishes or Provençal stews. Serve at around 16–18°C, and consider decanting for 1–2 hours if opening now, especially to help the wine fully unfold in the glass.
